Soda Cracker Toffee {Gluten Free}

Ingredients
  

  • 1 7.4 ounce package Gluten Free Schar's Table Crackers (or about 1 1/2 sleeves saltine crackers if you aren't gluten free)
  • 1 cup (2 sticks) butter
  • 1 cup brown sugar
  • 1 12 ounce bag semi-sweet chocolate chips
  • 3/4 cup chopped pecans

Method
 

  1. Preheat oven to 350°F.
  2. Line a 12 x 17 cookie sheet with foil and spray with cooking spray. I do two layers to be sure the pan stays clean.
  3. Lay the crackers in a single layer along the bottom of the pan.
  4. In a sauce pan, combine the brown sugar and butter. Bring to a boil for 2 to 3 minutes. Pour mixture immediately over soda crackers, spreading the mixture to completely cover the crackers.
  5. Bake for five minutes. Remove from the oven and sprinkle with the chocolate chips. Return to the oven for one minute, or just until the chocolate chips are soft. Spread the melted chocolate chips evenly across the crackers and sprinkle with chopped nuts.
  6. Cool, completely and break into pieces. Enjoy!
