
Growing up my Grandma always made this recipe for Spanish Eggs.
Spanish Eggs sounds kind of fancy, but it’s really just a quick and simple breakfast egg casserole. And it’s Gluten Free!
This is the perfect recipe for Christmas Eve or Christmas Day breakfast/brunch. For a delicious healthy meal, serve this alongside my Fresh Orange Julius.
Spanish Eggs {Gluten Free}
9 eggs
1 cups milk
1 cups mozzarella cheese
1 cups cheddar cheese
½ tsp garlic salt
½ tsp onion salt
3 oz. cubed ham
½ bunch green onions, chopped (more or less depending on taste)Beat Eggs and milk together. Add ½ the green onions and all other ingredients, stir.
Spray a 9×9 pan and pour egg mixture into pan. Bake at 350 F for 45 or until golden, puffy, and set up. When done, remove from the oven & sprinkle with the other half of the onions.
Serve with salsa, sour cream, avocados and any thing else you want.Enjoy!
