You can never go wrong with chocolate and peanut butter!

They are super simple and quick to make. The longest part of the recipe is waiting for them to set up.

I made these for a TV segment on Good Things Utah, you can see here. When they are fast enough for TV time, you know it really is a quick recipe!

To begin, start by placing the mini muffin liners on a large baking sheet, no need to spread them out, pack them in tightly. Then, it’s time to mix all the ingredients together.

Once the batter is ready, carefully pour it into each of the muffin cups, taking care not to overfill them. I like mine thin and only pour them about 1/4-1/3 of the way full. If you’re feeling adventurous, you can also top them with colorful sprinkles to add a playful touch and extra sweetness. I’ve linked some gluten free options here, here, and here. Now comes the hardest part: waiting! It’s essential to let those little treats set up and harden properly before indulging in them. This patience will pay off when you bite into perfectly formed and delicious Peanut Butter Meltaway. So, take your time and enjoy the anticipation of those delightful little treats to come.

When it comes to natural peanut butter, its smooth texture and rich, nutty flavor make it a fantastic choice for many recipes. In addition to being delicious, natural peanut butter is a healthier option as it typically contains just two ingredients: peanuts and salt. This simplicity ensures that you’re getting pure, unadulterated peanut flavor without any added sugars or hydrogenated oils.

As for the allergy statement on the chocolate chips, it’s always important to be mindful of potential allergens, especially when it comes to gluten. Checking the packaging for an allergy statement and verifying that the chocolate chips are indeed gluten-free is a crucial step in ensuring that your final creation is safe for everyone to enjoy.

Overall, taking these considerations into account will not only result in a delectable treat but also demonstrate thoughtfulness towards those with dietary restrictions. By making these conscious choices, you can create a delightful dessert that can be savored by all.

Homemade Peanut Butter Meltaways {Gluten Free}

Servings: 4 Dozen
Course: Dessert

Ingredients

  • 1 12- ounce package white chocolate chips
  • 1 cup (6 ounces) dark or semi sweet chocolate chips
  • 1 cup creamy peanut butter (I use all natural peanut butter)
  • 2 tbsp coconut oil
  • 4 to 5 dozen mini muffin baking liners or candy cups (it doesn't hurt to have a little extra!)
  • sprinkles (optional)

Method

  1. Combine the first four ingredients into a sauce pan. Melt over low heat until well combined.
  2. Arrange mini muffin baking liners on a shallow pan or tray.
  3. Pour melted chocolate mixture into the mini liners, filling a half full (I prefer mine thinner and only pour mine a fourth to a third full). Top with sprinkles, if desired. Place the baking sheet with filled mini liners in your refrigerator and chill until set (about one hour). Keep refrigerated. Enjoy!
  4. If I have left overs, I like to pop mine out of their liners and store in Ziploc bags; half in the fridge and half in the freezer for later

Notes

Be sure and check white and semi sweet chocolate chips to be sure you are buying a gluten-free brand. Also check sprinkles and non-perils to be sure they are gluten-free to make this an allergen friendly recipe.
