Peanut Butter Bars
- Preheat oven to 350°F
- Mix together butter, sugar, eggs, peanut butter, salt, soda, and vanilla in the bowl of a stand mixer.
- Add flour and oats, stir to mix.
- Spread into a 9 x 13" pan.
- Bake for 12 to 14 minutes. Do not over bake. The bars will look slightly golden on top and underbaked. That's just how you want them.
- Optional; spread with one cup of peanut butter whipped with one cup powdered sugar.
- Cool.
- Frost with fudge frosting. (recipe below)
Fudge Frosting
- Melt better in a saucepan over medium heat.
- Add the sugar, milk, and cocoa. Stir and bring to a boil.
- Boil for three minutes. Remove from heat and stir in the salt and vanilla.
- Beat the mixture with a wooden spoon for a few minutes. Let rest a couple of minutes, then beat again until the mixture is thickened but still pourable. Pour over bars and enjoy.

Peanut Butter: I've use both natural and regular peanut butter and both work great! Also both creamy or crunchy work great too.
I enjoy these bars both at room temperature or refrigerated.
