These peanut butter bars are not just delicious, but also gluten-free. When baking gluten-free, it’s important to use gluten-free oats, as not all oats are gluten free. I prefer using rolled oats to add more texture to the bars. Whether you prefer creamy or crunchy peanut butter, both work well in this recipe. Personally, I favor crunchy peanut butter because I like the chunks of peanuts. I have experimented with both all-natural peanut butter made from just peanuts, oil, and salt, as well as the typical shelf-stable peanut butter, and both variations turned out great.

In these peanut butter bars, I use a gluten-free flour blend. I like this one here. If you are new to baking with gluten free flour, it tends to run drier soaking up more moisture from other ingredients. When measuring gluten-free flour, I always make sure I fluff my flour before measuring, and then measure with a light hand. This helps prevent recipes from becoming too dry.

Peanut Butter Bars with Fudge Frosting {Gluten Free}

Ingredients
  

Peanut Butter Bars
  • 3/4 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 2 eggs
  • 3/4 cup peanut butter*
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla
  • 1 1/2 cups Gluten Free flour blend*
  • 1 1/2 cups Gluten free rolled oats*
Fudge Frosting
  • 1/2 cup (1 stick) butter
  • 1 cup granulated sugar
  • 1/2 cup evaporated milk
  • 1/4 cup cocoa powder
  • 1 tsp vanilla
  • 1/4 tsp salt

Method
 

Peanut Butter Bars
  1. Preheat oven to 350°F
  2. Mix together butter, sugar, eggs, peanut butter, salt, soda, and vanilla in the bowl of a stand mixer.
  3. Add flour and oats, stir to mix.
  4. Spread into a 9 x 13" pan.
  5. Bake for 12 to 14 minutes. Do not over bake. The bars will look slightly golden on top and underbaked. That's just how you want them.
  6. Optional; spread with one cup of peanut butter whipped with one cup powdered sugar.
  7. Cool.
  8. Frost with fudge frosting. (recipe below)
Fudge Frosting
  1. Melt better in a saucepan over medium heat.
  2. Add the sugar, milk, and cocoa. Stir and bring to a boil.
  3. Boil for three minutes. Remove from heat and stir in the salt and vanilla.
  4. Beat the mixture with a wooden spoon for a few minutes. Let rest a couple of minutes, then beat again until the mixture is thickened but still pourable. Pour over bars and enjoy.

Peanut Butter: I’ve use both natural and regular peanut butter and both work great! Also both creamy or crunchy work great too.
I enjoy these bars both at room temperature or refrigerated.
