The Best {Gluten Free} Double Chocolate Nutella Muffins

Ingredients
  

  • 1 cup sugar
  • 2 eggs
  • 1/2 cup avocado oil
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1/2 cup cocoa powder
  • 1 1/4 cups Gluten Free Flour Blend*
  • 2 tsp baking powder
  • 2/3 cup buttermilk
  • 1/2 cup super cookie chips
  • 1/2 cup nutella spread

Method
 

  1. Preheat oven to 375 F and line muffins tins with liners. I get about 18 muffins.
  2. In the bowl of a large stand mixer, add the sugar and eggs, and beat until light & fluffy, about three minutes.
  3. With the beater running, slowly pour in the avocado oil, and beat to combine.
  4. Add the salt & vanilla, mix just to combine.
  5. Add the cocoa powder, flour, baking powder, and buttermilk mix to combine. Do not over stir.
  6. Gently fold/stir in chocolate chips.
  7. Fill muffins tins 3/4 full.
  8. Melt Nutella in the microwave for about 25 seconds and put a spoonful on each muffin. Swirl in a circle on the top.
  9. Bake for 18 minutes, or until the tops spring back when pressed. Remove from tin and cool
  10. Enjoy!
