Method
- Preheat oven to 375 F and line muffins tins with liners. I get about 18 muffins.
- In the bowl of a large stand mixer, add the sugar and eggs, and beat until light & fluffy, about three minutes.
- With the beater running, slowly pour in the avocado oil, and beat to combine.
- Add the salt & vanilla, mix just to combine.
- Add the cocoa powder, flour, baking powder, and buttermilk mix to combine. Do not over stir.
- Gently fold/stir in chocolate chips.
- Fill muffins tins 3/4 full.
- Melt Nutella in the microwave for about 25 seconds and put a spoonful on each muffin. Swirl in a circle on the top.
- Bake for 18 minutes, or until the tops spring back when pressed. Remove from tin and cool
- Enjoy!
