Homemade Pizza + Sauce

Friday night in our home is homemade pizza and family movie night {with very few exceptions}. Sometimes we are tight on time, or I’m just plain tired after a busy week and I just don’t have time to make everything from scratch…so we will buy a take out pizza. But for the most part, it’s homemade pizza.

I’ve got a few tricks up my sleeve to help keep it simple and to help from feeling burnt out.

First, let me back up little. I’ve mentioned before that I love hand written recipes (hello shadow box in my kitchen with 4 generations of hand written recipes.) and write the date and year that I first received and made the recipe… Well, this recipe is no different.

I got this Amazing Pizza Sauce recipe from my roommate’s-boyfriend’s-mom back in my college days (how’s that for a line up! ha!) in 2004. This recipe still remains to ONLY sauce I make! Its so yummy and in true Carly fashion, simple!

I typically double or even quadruple the recipe to save time and the headache of measuring out and cleaning up everything weekly (trying to be more productive)! Then I measure out & freeze several quart sized bags of the sauce, laying them flat in the freezer. They hardly take up any room, and then for the next few weeks, or even months, I only have to make dough on pizza night. {Recipe below}

Well, this week, New Grains came to the crazy-schedule-moms rescue! New Grains has so many delicious Gluten Free options; these pre-cooked GF pizza crusts being one of them! You guys, pizza night (especially if you are GF) just got a heck of a lot easier!

We simply pulled out a crust (comes in a 3 pack), some homemade sauce from the freezer, added our toppings, and in 10 minutes had delicious pizzas!

The crusts are small(ish) and I’d say serve 2 people, 3 if you are feeding small eaters, or are serving a salad or a veggie on the side. For our family of 3, we used a couple of crusts for dinner, and had some leftover. We made my favorite pizza, Margherita, and my daughters favorite, pepperoni and cheese. A couple of days later we used our last crust for a quick and delicious lunch.

If you have a large family, or not everyone eats GF in your household, these would be great to keep on hand (freeze) for a quick meal when you can’t eat what everyone else is eating!

Margherita Pizza

New Grains Gluten Free Pizza Crusts
Amazing Pizza Sauce (recipe below)
Mozzarella cheese, cut into chunks (I prefer the log type Mozzarella)
Heirloom Tomatoes, sliced (or quartered if baby tomatoes)
Fresh Basil, thinly sliced
Fresh grated Parmesan Cheese
Balsamic Reduction

Preheat oven to 425 F. Place pizza crust on a stone (or pan). Spread with desired amount of pizza sauce. Add chucked mozzarella, tomatoes, and sprinkle with Parmesan cheese. Bake for 5-10 minutes depending on how crisp you like your toppings and crust. Remove from oven and let cool for 3-4 minutes. Sprinkle with Fresh basil and drizzle with Balsamic reduction. Enjoy!

Amazing Pizza Sauce

15 oz can tomato sauce
¼ cup water
1 tsp sugar
½ tsp dried oregano
¼ tsp dried basil
¼ tsp dried thyme
¼ tsp garlic
¼ tsp salt
1/8 tsp pepper
1 bay leaf
Dash of onion powder
½ tsp lemon

Combine everything together in a sauce pan except pepper. Bring to a boil, and then simmer for 30-60 minutes to thicken. Add pepper, remove bay leaf.

*I like to double or even quadruple the sauce and then freeze in individual quart sized freezer bags.
