We love making these brownie batter protein bites. They taste like a cross between brownie batter and a no-bake cookie, but they’re packed with protein and there’s no oven involved.
When my daughter was home from college last, she asked me to make her a double batch to take back with her. They’re her easy grab-and-go snack, and they’re healthy and protein packed. That’s a pretty good review.

What you need
- Oats, blended into oat flour. I use gluten-free sprouted rolled oats and blend them in my blender. One measured cup of oats makes just the right amount of oat flour for a double batch. Use oats labeled gluten free. Regular oats are often cross-contaminated with wheat. I don’t stick to one brand, but One Degree Gluten Free Sprouted Rolled Oats check both boxes.
- Protein powder. I use Just Ingredients Double Chocolate Protein Powder. It’s what makes these taste like brownie batter. Use my code GARDENSPOT to save on your order. Shop Just Ingredients Double Chocolate Protein Powder
- Cocoa or cacao powder. I like cacao. Any gluten-free one works, like BetterBody Foods Organic Cacao Powder.
- Nut butter. Any kind you like. I use natural peanut butter that’s just peanuts and salt, like Smucker’s Organic Natural Creamy.
- Honey or maple syrup. If you use maple, get pure organic with nothing added, like Maple Grove Farms Organic Pure Maple Syrup.
- Milk. Just a splash to bring the dough together.
- A pinch of sea salt, if your nut butter is unsalted.
- Mix-ins, pick your favorite: mini chocolate chips (I use Enjoy Life Semi-Sweet Mini Chips), Trader Joe’s mini peanut butter cups, mini M&Ms, or mini peanut butter M&Ms.
Is it gluten free? It is when every ingredient is labeled gluten free. I have celiac, so I check every label. Watch the oats, the mix-ins and the protein powder. M&Ms aren’t labeled gluten free, so if you’re making these for someone with celiac, check the package or use chocolate chips labeled gluten free.

What I use to make them
- Blender. Mine is an older Vitamix. The Vitamix 5200 is the closest one you can buy now.
- Baking sheet. Any sturdy one works. The Nordic Ware Naturals Baker’s Half Sheet is a good one.
- Parchment. I buy these unbleached precut parchment sheets.
How I make them

- Line a baking sheet with parchment.
- Make the oat flour. Blend 1 cup of gluten-free rolled oats in your blender until it’s a fine flour.
- Mix everything. Throw everything in a bowl and mix it together. Add the milk 1 tablespoon at a time until the dough holds together.
- Roll. Roll the dough into about 24 balls and set them on the baking sheet.
- Chill. Put them in the fridge for 30 minutes so they firm up.
- Store. Put them in a bag in the fridge or freezer.
How to store them
Keep them in a bag in the fridge or freezer and pop them out as you need them. Serve them cold. A double batch goes a long way.

Brownie batter protein bite questions
Do I have to buy oat flour?
No. I blend gluten-free sprouted rolled oats in my blender. One cup of oats makes the right amount for a double batch.
Can I make a smaller batch?
Yes. Cut everything in half for 12 bites. I always make the double batch (which is how I wrote the recipe above).
My dough is too crumbly. What do I do?
Add milk 1 tablespoon at a time until it holds together when you squeeze it.
Can I use a different protein powder?
You can, but the flavor and texture will change. The Double Chocolate is what gives these the brownie batter taste.
Are these gluten free?
They are when your oats, mix-ins and protein powder are labeled gluten free.
