
Caramel popcorn and summer just seem to go together around our house. Whether it’s a warm summer evening with late nights and starry skies, a fun game night with friends and family, lively swim parties, outdoor movie nights under the twinkling lights, relaxing by the tranquil lake on a sunny day, being mesmerized by colorful fireworks on the Fourth of July, or exploring the great outdoors while camping; you can almost always find a big bowl of fresh homemade Ooey Gooey Caramel Popcorn at hand. There’s something truly special about the sweet, buttery aroma filling the air as the golden kernels pop and coat with rich, sticky caramel, creating a delightful treat that brings people together and adds a touch of magic to these cherished summer moments.
My sweet friend and neighbor graciously shared this incredible caramel recipe with me years ago. Its versatility is truly remarkable – not only does it enhance the flavor of popcorn, but it also serves as the perfect Caramel Apple dip during the fall season. What’s more, it’s Gluten Free, making it an ideal option for those with dietary restrictions.

Don’t forget to sprinkle your big bowl of Ooey Gooey Caramel Popcorn with some Flake Salt whilst it’s still hot for some added deliciousness!

I love buying my popcorn locally from Dibble Farms! They are a well-established local farm that has perfected the art of growing top-quality popcorn. I always keep a large 5-gallon bucket of their popcorn on hand. Not only do we pop it, but I also grind it into cornmeal with my mill grinder!

Ingredients
Method
- Melt butter with sweet and condensed milk, and Corn syrup in a large pan (so it won't boil over).
- Add sugar, stir. Cook on medium to low heat until it starts to bubble. Once it boils, cook for eight minutes, stirring constantly. Careful not to burn.
- Remove from heat and add vanilla, stir.
- Airpop a big bowl of popcorn (as much as wanted) and toss with warm caramel sauce until desired consistency is reached. While still warm sprinkle with flake salt*.
- Leftover caramel can be refrigerated and makes an excellent caramel apple dip.
