Peanut Butter Protein Poppers {GF Version}

Peanut Butter Protein Balls are seriously the bomb! They’re our go-to snack for everything – after school, lunchboxes, pre or post gym, or even when we’re hitting the slopes. We can’t get enough of these tasty treats!

This recipe is all about combining steel-cut and rolled oats with your favorite mix-ins. The best part? It’s gluten-free! Nowadays, it seems like everyone knows someone who’s gluten-free or is trying it themselves. So, when you’re planning a playgroup, treating an expectant mom, or throwing a party with gluten-free guests, this recipe has got you covered. Just make sure to grab some gluten-free oats because not all oats are created equal. Get ready to enjoy a delicious gluten-free treat!

Peanut Butter Protein Poppers {Gluten Free}

{Gluten Free} Peanut Butter Protein Poppers

Ingredients
  

  • 1 cup gluten-free rolled oats
  • 1 cup gluten-free steel cut oats
  • 1/3 cup unsweetened coconut flakes
  • 1 cup nut butter of choice (I use natural peanut butter)
  • 1/2 cup ground flaxseed, see note
  • 1/2 cup hemp hearts
  • 1/2 cup chia seeds
  • 1 cup raw honey
  • 2 tsp vanilla
  • 2 tbsp coconut oil
  • 2/3 cup mini M&Ms or mini chocolate chips

Method
 

  1. In the bowl of a stand mixer, mix together all ingredients, except for the mini M&Ms/chocolate chips. Mix well. Add chocolate chips, or other desired mix-ins.
  2. Roll dough into balls about an inch in diameter and place on a parchment lined baking sheet.
  3. Freeze for about one hour, and then store in Ziploc baggies either in the refrigerator or freezer for a quick on the go snack.

Notes

*Feel free to any other add-ons you might like granola, butterscotch, chips, almonds…be creative
