{Gluten Free} Blackberry Cobbler

{Gluten Free} Blackberry Cobbler

A rustic simple bake. This Blackberry Cobbler will knock your sock off! The recipe comes together really quickly, the longest time requirement is the time spent baking (1 hour). My kind of recipe!!

Ingredients

  • 1 stick of butter melted
  • 1 1/4 cup sugar
  • 1 cup Gluten Free all purpose flour (I like the Cup4Cup brand)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk dairy or non-dairy
  • 2 cups fresh blackberries I bet frozen would work too

Method

  1. Butter baking dish (I used 10 inch pie pan or 10 inch cast iron skillet)
  2. Mix 1 cup of sugar (saving the other 1/4 cup) + baking powder, salt & flour in bowl.
  3. Whisk in milk. Pour in melted butter and whisk well.
  4. Pour batter into buttered baking dish. Sprinkle blackberries evening over the top. Sprinkle the remaining 1/4 cup sugar over the top.
  5. Bake 350 for 1 hour, or until bubbly & golden.
  6. Serve with cream or ice cream {or both!}
